Protein Energy Bites

INGREDIENTS

  • 1 cup nut butter (like almond, cashew, or sunflower)
  • 3-5 pitted medjool dates
  • ¾ cup seed blend (like from corresponding seed cycle phase - SEE BLOG POST), or a blend of hemp seeds, chia, sesame, or flax)
  • 3-4 Tbsp protein powder (vanilla, chocolate, or other preferred flavor)
  • Optional: Organ complex – use sparingly, a little goes a long way and is bitter in large amounts

Optional Toppings

  • Melted dark chocolate (dairy-free as needed like Enjoy Life)
  • Unsweetened toasted coconut
  • Sea salt


INSTRUCTIONS

1. Add nut butter, pitted dates, seeds, protein powder, and optional organ complex to a food processor and blend until all ingredients are well combined into a cookie dough-like texture.

2. If too wet, add more protein powder or seeds. If too dry/crumbly, add more nut butter. NOTE: These should be tender, they’ll firm up more in the refrigerator or freezer.

3. Taste and adjust flavor as needed (more protein powder for flavor or dates for sweetness - chop first to encourage even blending). Mix again until well combined.

4. Scoop out rounded 1 Tbsp amounts and roll into balls. Place on a parchment-lined plate or platter.

Optional:

Roll the balls in optional topping, or for optional dark chocolate topping:

Melt dark chocolate in a double boiler on the stovetop, or in 20-second increments in the microwave, then spoon a small amount over the bites. Add additional toppings while chocolate is still soft (like coconut or sea salt).

5. Transfer balls to the freezer or refrigerator to chill until firm.  Store in fridge up to 2 weeks, freezer for up to 1 month.
